Smoked Salmon and Sweet-Potato Hash

Ingredients

  • Nonstick vegetable oil spray
  • 3 tablespoons vegetable oil
  • 1 pound red-skinned sweet potatoes (yams), peeled, cut into 1/2-inch pieces (about 3 1/2 cups)
  • 1 pound leeks, chopped (white and pale green parts only; about 2 cups)
  • 1 large red bell pepper, cut into 1/2-inch cubes
  • 6 ounces smoked salmon, chopped
  • 4 teaspoons chopped fresh dill
  • 1 tablespoon grated orange peel
  • 1/4 cup crème fraîche or sour cream

Recipe Preparation

  • Spray six 3/4-cup ramekins with nonstick spray. Heat vegetable oil in large nonstick skillet over medium heat. Add sweet potatoes, leeks, and red bell pepper and sauté 3 minutes. Reduce heat to medium-low; cover and cook until potatoes are tender, stirring occasionally, about 10 minutes. Uncover, increase heat to medium-high and cook without stirring until potatoes are brown on bottom, about 5 minutes. Using spatula, break mixture into pieces and turn over. Cook until brown on bottom, about 3 minutes. Stir in salmon, dill, and orange peel. Season mixture with salt and pepper. Divide hash among prepared ramekins; press to compact. DO AHEAD Can be prepared 1 day ahead. Cover and refrigerate. Uncover and reheat in 325°F oven 15 minutes before serving.

  • Unmold hash onto 6 plates. Top each serving with 2 teaspoons crème fraîche.

The only time I’m ok with mixing my night-time habits with my day time habits is when we have breakfast for dinner. I can’t explain it but eating breakfast for dinner makes me feel like I’m cheating time.

When I make potato hash, I serve it for breakfast because I usually top it with eggs. This time, I made sweet potato hash and added salmon which makes this hash perfect for an evening meal.

The crispy, salty bacon is a great partner for the sweet potato and mild salmon. The yolks from the eggs almost form a sauce as they break open. The whole thing is rather heavenly.

If you haven’t made a poached egg before, have no fear. I believe it sounds more intimidating than it actually is. A poached egg is similar to a fried egg in appearance, but there is no fat involved. Simply bring vinegar infused water to a simmer, carefully drop your egg into the water (a cup is very useful for this step) and let the water gently cook the egg. Easy like Sunday morning right?

Kids can wear pajamas all day, I can eat sweet potato hash all day, we all win.

Served this for dinner and it was a fun break from traditional dinner fare. I used our egg poacher pan for the eggs - a lot less work than described in the recipe. I meant to have the herbs, long story why I didn't, but it worked even without them. Great way to serve salmon to those who don't love the fish.

This was awesome at a brunch for 25 people. instead of poaching the eggs individually, I spread the hash in a roasting pan, cracked (12) eggs on top, and let the pan keep in a 300-F oven for 5-8 minutes until the eggs were set. Served with fruit salad seaweed salad and almond-ginger biscotti.

My daughter and I started making this for Christmas brunch when it first appeared, and it has become a family tradition. Once,I prepared the ingredients, put them in my dehydrator, and took it on a backpacking trip - it was fantastic after a day of walking through the Monongahela National Forest.

This was a big hit at my sunday-after-thanksgiving brunch. Some hints: you don't really need the fresh salmon if you don't have it handy. The smoked salmon adds plenty of salmon flavor. Because I was cooking for a large buffet party, I didn't make poached eggs (though it would be better with them) but opted for creamy scrambled eggs on the side, which still worked nicely. Also, don't be scared off by the requirement of two skillets. I just used one dutch oven and stirred often to keep the bottom from burning. To the person who had trouble with the sweet potatoes cooking: if cut small enough, they should cook perfectly, but don't forget to put the lid on the skillet - the steam is what does it. I wouldn't cook them first because theyɽ get too mushy. Final note: be aware that more people than you might guess have an aversion to sweet & salty tastes mixed together, in which case they are missing quite a treat here, so be careful when making this your only breakfast dish.

My husband and I have made this dish several times to rave reviews. Unlike the other reviewers, we use the specified amount of maple syrup and find it to be well balanced.

Made this for bruch for my law school roommates - they raved. I did cut back the maple syrup somewhat.

I love this recipe! It tasted as fantastic as it looked, but be aware it is fragile in it's final stages. I plan on using this recipe for a small dinner party but have served it as a brunch in the past.

The best thing I can say about this recipe is that it looks wonderful. I did not like the taste of sweet potatoes with salmon. I took the recommendation of the previous reviewer and cut the syrup by a 1/3. Was not too sweet. Also, poached the eggs in the pan with the hash at the end. Cut down on the work. (cover pan)

This dish was so good! However, my husband and I found it to be a little too sweet with the maple syrup. I would definitely make it again, but either omit or cut down on the maple syrup.

Ingredients

  • 3 small sweet potatoes
  • 2 tablespoons avocado oil
  • 1/2 teaspoon black pepper
  • 6 eggs
  • 1/4 cup almond milk
  • 4 ounces of smoked wild salmon
  • 1 cup roasted brussels sprouts
  • 1/2 cup Organic Girl Spinach
  • 1/2 cup caramelized onions
  • 1/3 cup zucchini, sliced
  • 1 cup Organic Girl Arugula

Instructions

  1. Preheat oven to 400 degrees
  2. Slice the sweet potatoes into thin slices in a circular shape
  3. Grease a cast iron skillet or 8-9 inch baking dish well
  4. Line the rim of the skillet with sweet potato pieces and the bottom of the skillet so it is covered (don’t worry if there are spaces!)
  5. Drizzle avocado oil on top and sprinkle black pepper
  6. Bake in oven for 20 minutes
  7. Whisk together eggs and almond milk well
  8. Add roasted brussels sprouts, spinach, sliced lox, onions and zucchini on top of sweet potato
  9. Pour egg mixture on top and bake in oven for 30 minutes at 350 degrees
  10. Cover the quiche with foil then bake again until cooked through (about 15-20 minutes)
  11. Remove from oven and sprinkle with additional arugula, let it cool and enjoy!
  12. *Will stay good for 5 days in fridge. You can also freeze these for longer!

How to Make Salmon and Eggs

This dish is basically a quick skillet scramble of eggs and hot smoked salmon, finished with chives and pepper. It’s a flexible recipe, and leftovers store pretty well.

Beat the Eggs

Place four eggs in a bowl, and add half-and-half:

I like the consistency of half-and-half here, but I have notes in the recipe card if you prefer to substitute water, just milk, or just cream instead.

Add a small amount of salt as well, and beat with a fork or whisk until well blended:

Let’s Talk Salmon

For my preparations of this breakfast, I use a hot smoked salmon.

This is a type of smoked salmon that is actually roasted, and it has a different texture from what people think of as the standard smoked salmon.

I highly recommend seeking out this kind of salmon. I buy mine from Whole Foods, but I often see some sort of hot smoked salmon at most grocery stores. It’s become quite popular!

If for whatever reason you can’t find it, classic cold smoked salmon is delicious too, or you could add some leftover Baked Salmon to the scramble.

Scramble the Eggs

Heat some ghee or butter in a skillet, then add the beaten eggs:

Push the egg around with a flat spatula, to begin forming curds:

As you keep scraping the bottom of the pan, the curds will become larger and the egg will cook more and more:

Take it to the point where the egg is almost cooked, but not quite yet. You can still see some remnant liquid:

Add pieces of the salmon and gently fold it in while you continue to cook.

Finish the Salmon and Eggs with Chives

Adding a fresh herb totally elevates the meal, and my favorite is chives:

Dill and chervil are also wonderful, and are very compatible with both salmon and eggs.

Scallion greens are great as well.

I also like to finish with some freshly ground black pepper:

Eat immediately while the dish is warm.

I usually eat this dish on its own, but you could also add half an avocado, or a side of Hash Browns to take the meal further. Enjoy!


Eva’s Wild Smoked Salmon and Sweet Potato Breakfast Hash

Warning! This dish is highly addictive. The way garnet yams, lemon zest, dill and smoked
salmon taste when I get all of it in one bite is just out of this world. I like to top this with poached
eggs and creme fraiche but any way you like to prepare your eggs will work great.

Ingredients

4 ounces red onion, medium dice
2 pounds sweet potatoes, 1/2” diced
4 ounces smoked salmon, crumbled
1 ounce avocado oil
4 ounces green pepper, 1/2” dice
1 ounce butter
1 teaspoon paprika
1 tablespoon kosher salt
1/2 tablespoon black pepper
2 sprigs dill, finely chopped
4 ounces sour cream, garnish
1 each lemon, garnish

Serve with a poached or a six minute egg.
Suggested Wine: Prosecco

  1. Toss sweet potato and onion and green pepper with avocado oil, paprika, salt, pepper.
  2. Pour vegetables onto a lined sheet pan and roast at 400 until sweet potatoes are fork tender. Set aside and cool.
  3. Heat a 10” saute pan on medium high heat. Add butter to the hot pan.
  4. When the butter is melted add the diced pepper and Eva’s Wild Smoked Salmon.
  5. Add the roasted sweet potato mixture.
  6. Heat through and serve in 5 equal portions.
  7. Garnish with sour cream, fresh dill sprigs and grated lemon zest.
