Pranzul si Cina in SUA

In acest articol va voi descrie cateva din mesele pe care Americanii le consuma la pranz si cina. Zic cateva pentru ca lista e lunga, iar scriitorul un pic cam obosit. :-) Veti observa ca nu exista grozave diferente fata de ce se mananca in Romania, dar exista un cult al artei culinare in State. Sa fii binge e o profesie foarte respectata in SUA si se fac bani frumosi din aceasta meserie, mai ales daca prinzi loc la un restaurant bun sau iti deschizi propriul restaurant si e de succes (vorbim de salarii cu 6 cifre). Finally. sa ne intoarcem la mancare!

Am decis sa combin pranzul cu cina in acelasi articol pentru ca ceea ce mananci la cina, se poate manca si la pranz. La mai toate restaurantele exista lunch portion (portie de pranz) si dinner portion (portie de cina).

Sa incepem cu cateva sandwich-uri. In poza de mai jos este un sandwich pe paine Italiana ciabatta cu friptura de vita la cuptor (roast beef). Se serveste cu un sos mai deosebit gen au-jus si salata de cartofi. Eu una nu mai auzisem de friptura intr-un sandwich, dar recunosc ca este foarte bun. Friptura se face la temperatura mica, dar dureaza mult timp, chiar si 9- 12 ore. Asa iese extrem de frageda si nici nu iti trebuie cutit ca s-o tai. Ce ziceti?

Alt sandwich pe care il puteti consuma aici este cel cu corned beef (carne conservata de vita). Conservarea se facea la inceput cu multa sare, dar acum se face cu fel de fel de condimente. In poza nu se vede foarte bine din cauza branzei elvetiene topite (swiss cheese), dar carnea de vita preparata in acest fel are o textura uscata si usor faramicioasa. Sandwich-ul mai continea si un sos Cajun picant (cajunii sunt locuitori din statul Louisiana de origine franceza) si o mica salata de varza cu branza mucegaita (blue cheese). Poate suna ciudata combinatia, dar eu sunt innebunita dupa branza mucegaita. Oricun, abia ca s-a simtit cu celelalte arome. Langa sandwich, se vede o ganitura traditional sudica (southern): turnip greens (care cred ca se traduce ca frunze de nap). Acestea sunt fierte vreo ora - doua si servite cu otet si bucati de sunca crocante. They are very good!

In America se mananca si peste. Somonul este pestele meu preferat si de aceea am tinut sa va arat un somon la gratar (care se face in cam 5 minute) cu sos de iaurt cu marar si salata de spanac. Foarte simplu si e gata foarte repede! Somonul este si foarte bun pentru sanatate, dar stiu ca in Romania se gaseste mai greu, sau daca se gaseste, e congelat si adus cine stie de unde?! Cel mai bun e somonul salbatic necongelat din Alaska, dar si pretul e pe masura. Un kilogram ajunge cam $26, cel putin in zona mea.

O cina traditionl sudica, ca tot ma invart eu prin sud in ultima vreme, este cea din poza de mai jos. Pui prajit cu frunze de nap (turnip greens), cartofi piure cu sos de friptura (gravy), painici fragede (biscuits) si porumb. Puiul e prajit ca la Americani. intr-o galeata de ulei, dar asa iese crocant, ce sa-i faci? Eu am facut si la cuptor si a iesit la fel de bun, dar prajit e autentic. Negrii din America, in special, sunt stereotipizati ca mananca acest fel de mancare. Cred ca are legatura cu traditiile de pe vremea sclaviei.

Ca tot vorbeam de pui. iata si o alternativa mai sanatoasa, facuta in casa. Ce vedeti in poza de mai jos e un pui intreg ce fusese uns cu unt si dat cu sare si lamaie, si copt la cuptor. Cel mai bine iese cand il faci la cuptor cu convectie (aici exista multe feluri de cuptoare) pentru ca aerul cald circula in mod egal peste tot si se coace uniform. Asa nu iti iese un pui uscat! Acest pui este servit pe un pat de salata rucola, rosii cherry, masline si crutoane facute de la zero in casa. Va recomand sa faceti si voi, doar atentie la pui sa nu se usuce la copt. O tava cu apa la cuptor ajuta mult prin aburii care ii emana.

Americanii mananca si multa mancare italiana! Aici vedeti o lasagna facuta in casa, dar mai speciala. cu spanac. :-) Aici n-o lungesc ca banuiesc ca lumea cunoaste mancarea italiana cat de cat. A fost prima mea lasagna desi locuiesc aici de ceva timp, si mi-a placut foarte mult.

La fel de faimoasa e si salata Cezar (Caesar). Este o salata relativ simpla din laptuca, crutoane cu usturoi si un sos facut cu hamsie, galbenus, ulei de masline si zeama de lamaie. Se serveste pe de-asupra cu branza rasa Parmezan (Parmesan cheese). Yummy! Tatal logodnicului meu face cea mai buna Caesar din lume, am spus-o! :-)

Mai jos vedeti costite de porc la cuptor (temperatura mica, timp indelungat binenteles) cu un sos special, iar dedesubt, cartofi piure si varza de Bruxelles la cuptor (preferata mea!). Simplu, dar gustos! Si aceasta friptura e foarte frageda si cade efectiv de pe os. Fac o paranteza acum. una din cele mai Americane mese pe care le-am mancat eu vreodata (si una din preferatele meu) e Baby Back Ribs (costite afumate si gatite vreo 12 ore pana, la fel, cad de pe os!) Se servesc cu fel de fel de sosuri, dar traditional e sosul Barbeque (de gratar). Trebuie sa mananci cu mainile asa ceva, dar se merita. Am sa scriu un articol despre asta cand incepe sezonul de Baby Back Ribs in curand. -)

Acum ceva in stil mexican. O salata ce consta in laptuca la gratar, porumb, fasole neagra, sos Chipotle, branza mexicana queso, si pui "innegrit". Sosul este facut din iaurt si un soi de ardei iuti mexicani branza e din lapte de vaca, iar puiul se numeste "innegrit" deoarece condimentele se ard putin pe gratar, dar dau gust bun. Este o salata picanta, asa cum se poarta la mexicani! Ce parere aveti?

In sud se mananca mult gris daca traduc eu bine (grits). E ca un fel de mamaliguta alba moale. In poza de mai jos vedeti mancarea mea sudica preferata, creveti cu gris (shrimp and grits). Se face cu multa branza Americana Cheddar, cu legume la tigaie si carnat iute. Sa trec mai departe pana nu ma apuca nostalgia prea tare! :-)

Apropo de creveti. mai jos serviti niste taco cu creveti (shrimp tacos). Nu stiu daca s-a auzit de taco-urile in Romania, dar in caz de nu stiti, un taco e o turta subtire din faina alba care are o forma mai rigida. Se umple cu de toate. in cazul acesta cu creveti. Se serveste cu lime (un fel de lamaie verde) si alaturi, fructe proapete. Va spun sincer ca daca crevetii nu ar avea colesterol mare, i-aas mdevora in fiecare zi!

Si ca sa nu ziceti ca Americanii nu mananca si desert (nu alta, dar v-ati insela amarnic), v-a prezint unul aici. E o tarta cu crema de lime (acea lamaie de care v-am pomenit deja), sos de zmeura si crema mascarpone cu alune macadamia (originare din indepartata Australie). Crusta e facuta dintr-un fel de biscuiti numit Graham crackers.

Spre deosebire de Romania, SUA este dominata de consumerism si, implicit, de restaurante. Conceptul "eating out" (mananci in oras) este la el acasa, In Romania mi-era frica sa mananc la restaurante ca nu puteam fi sigura de calitate si ma mai trezeam, Doamne fereste, si cu intoxicatie alimentara. Nu zic ca nu exista si localuri in care mananci linistit. Chiar am mancat bine si in siguranta la cateva restaurante cand am fost in Romania in 2013 in excursie prin tara. Insa, serviciile si ofertele nu se compara cu ce gasesti in America. Inspectiile sanitare sunt extrem de severe si dese. Drepturile consumatorilor sunt luate foarte in serios. REGULILE SUNT RESPECTATE!

Daca va intrebati cum sunt preturile aici, ei bine. depinde de restaurant/locatie. Daca mergi la un restaurant de 4 - 5 stele, evident ca preturile vor fi proportionale, dar si calitatea in majoritatea cazurilor. Daca alegi sa mergi la diner-ul din coltul strazii (un mic local), preturile vor fi mai mici. Sunt optiuni pentru toate buzunarele. La restaurantele de toate zilele la care merg Americanii de rand, ajunge cam $20 - $25 masa pentru un cuplu incluzand bacsisul chelnerului. La un restaurant mai select, poate ajunge si $100 daca mai si bei ceva.

Apropo de bacsisuri. nu stiu cum e obiceiul in Romania pentru ca, dupa cum v-am zis, eu nu am frecventat restaurantele cat am locuit in tara, dar in SUA este o lege nescrisa referitoare la bacsis. In mod "normal". e greu sa definesc acest cuvant, dar sa zicem de regula. se lasa 15% din consumatie la chelner, care se adauga la nota de plata. Daca esti impresionat de serviciile oferite, atunci poti lasa si 20% sau mai mult. cat te tine buzunarul. Pe de alta parte, daca chelnerul a fost obraznic si neprofesionist, poti sa nu-i lasi nimic si sa cere sa vorbesti si cu manager-ul sa vada ce e cu chelnerul respectiv. Lumea cand iese in oras asteapta servicii de calitate si daca nu. plangerile sunt luate in serios. Chestia cu ciubucul e oarecum necesara de indata ce chelnerii fac cam $3 pe ora (iar salariul minim la ora actuala este $7.25 pe ora). Daca nu ar fi ciubucul, saracii chelneri nu ar avea din ce sa traiasca. Dupa bacsis si multe ore de lucru, se poate depasi cu mult salariul minim pe ora. Oricum, faptul ca depind de consumatori ii forteaza si pe chelneri sa ofere servicii cat mai bune. Da, exista si oameni care nu lasa cat ar fi "normal," poate chiar nimic, dar asta e exceptia de la regula. De obicei Europenii vin la restaurantele din America si nu se conformeaza obiceiului pretinzand ca "nu asa se face" la ei acasa. Pacat ca exista aceasta reputatie (care, apropo, se extinde si in Asia, nu doar in Europa). Eu zic ca e frumos sa ne adaptam la obiceiurile locului daca decidem sa ne petrecem ceva timp acolo. Dupa ani de locuit in SUA, nu concep sa nu las bacsis proportional cu serviciile, fie ca sunt aici, in Romania sau altundeva. Mi se pare normal.

Ei bine, sper ca nu v-am cicalit prea mult! :-) Am vrut sa va fac o idee despre cum stau lucrurile din acest punct de vedere. Insa, in opinia mea, cea mai mare diferenta dintre mancatul la restaurant in SUA si Romania nu sunt preturile, nu e bacsisul. e calitatea serviciilor. Nu va pot spune de cate ori am vrut ma ridic si sa plec de la restaurantele la care am poposit in Romania in vacanta din 2013 din cauza neprofesionalismului si obrazniciei persoalului. A fost ca o frustrare continua din acest punct de vedere, mai putin in 2 - 3 cazuri de care va voi vorbi in alt articol. Dar sa incheiem cu voie buna si cu speranta de viitor.
