    Combine ingredients and ice in a cocktail shaker.

    Instructions for rimming glasses: moisten rims of martini glasses with a little orange or pineapple juice. Gently shake off any excess and immediately dip into the cake mix/sugar mixture.

  • Looking for a theme cocktail for your bachelorette gathering or bridal shower that incorporates two girl-tested and approved favorites, i.e. weddings and martinis?How about a Wedding Cake Martini, a sweet little cocktail “wrapped” with decorative rim.The cocktail combines a little amaretto (yum, always a good idea!), a little orange juice or pineapple juice and just a touch of vanilla vodka. Fresh squeezed OJ is absolutely worth the effort here (particularly if you cheat like I do and used the fresh squeezed by the grocer version). Pineapple juice from the can, however, works just fine.Take the nuptial theme a bit further by adding a fun sugared rim. (I just returned from London, and came back with a case of royal wedding fever, and as such couldn’t resist a little sugared rim rhapsody in blue when I photographed this cocktail!).The perfect way to toast the bride-to-be!Cheers!

Recipe Summary

  • 1 (18.25 ounce) package white cake mix
  • 1 cup all-purpose flour
  • 1 cup white sugar
  • ¾ teaspoon salt
  • 1 ⅓ cups water
  • 1 cup sour cream
  • 2 tablespoons vegetable oil
  • 1 teaspoon almond extract
  • 1 teaspoon vanilla extract
  • 4 egg whites

Preheat oven to 325 degrees F (165 degrees C). Grease and flour an 11x13 inch cake pan.

Stir together the white cake mix, flour, sugar, and salt in a large bowl until well mixed. Pour in the water, sour cream, vegetable oil, almond and vanilla extracts, and egg whites, and beat with an electric mix on low until all the ingredients are mixed and moistened but some lumps still remain, 4 minutes.

Pour the batter into the prepared cake pan, and bake in the preheated oven until the top is a light golden brown and a toothpick inserted into the center of the cake comes out clean, about 25 minutes. Allow to cool before frosting.


Cake Batter Martini

Last week I was out having drinks with some girlfriends at a new swanky restaurant/bar. And before we start, yes I am the type of girl that enjoys those $12 ridiculous drinks -judge away. I like the fun colors and the fancy alcohols…but I really love the creativity the bartenders (or as they now call themselves, mixologists) put behind the drinks. I started off with a Watermelon Punch Mojito, dove into a Passion Pop Rock Martini and then was checking the menu for my next conquest. I was consulting the bartender on my next choice, when told me he had something really special just for me. First I thought maybe he was giving me his number -calm down Jorge, I would have pointed out my ring- but instead a pure white martini was placed in front of me.

I wasn’t quite sure about it…hello? Where are the colors and the cool garnishes? But then I took a sip… CAKE BATTER! Seriously, it was like the coolest birthday party, but in my mouth. I was hooked and proceeded to have another. I knew I could make one myself and even asked the bartender for his recipe. He told me no way, it was his secret. I handed him my card and told him to check here in a week. I promised I would make his Cake Batter Martini, but I would make it better.

So Aiden, if you are here, I made it…and with the addition of sprinkles, I definitely made it better!

After a quick google session, I found this baby over on How Sweet Eats. Big surprise, homegirl thinks of everything! I used the Cake Vodka by Three Olives (Pinnacle also makes it) and used heavy cream to stick the sprinkles to the edges. To get the color drizzle effect, I just dropped some sprinkles around the edge right after pouring the martini.

The Cost Difference

Offering a signature cocktail or two rather than an open bar can save a serious chunk of money for your wedding. Since costs vary wildly between locations and caterers, it’s hard to get an exact detailed idea of savings per per person per hour of open bar (and if you’re already talking to caterers, you know what we’re talking about!), but limiting the liquor to signature cocktails can bring the costs down pretty far. For example, if you’ve got an anticipated 100 people attending your four-hour wedding reception, and you offer signature cocktails along with the sodas/punch/etc., you can expect to go through about 10 liters of the main liquor in these martinis. At about $25 per liter (depending on your area and your choice of liquor, of course), you can provide enough of these wedding martinis for everyone to feel like dancing at a cost of probably $400. Add the non-alcoholic beverages and the barware for a grand total of probably $800.

If you were to go with a (relatively average) open bar per-head catering cost of around $15 per person per-hour for a four-hour reception, your bar cost would be about $6,000.

That’s a pretty decent chunk of change, and we’re all about saving money here at Wedding for $1000!

I love this cocktail because the combination of ingredients makes it a cake in drink form. While the flavors of this martini alone are sweet and delicious, the sprinkles on the rim add color, fun, and memorable detail.

Backyard Social gathering in a Glass

For those who’re internet hosting a garden-inspired marriage ceremony, there’s no place to search for inspiration fairly like Bangkok’s historic Mandarin Oriental lodge and their Bamboo Bar. Beverage supervisor Jamie Rhind is used to serving cocktails among the many lush tropical gardens on the property and used simply that to create this drink, which appears like an emerald inexperienced gin and tonic.

“An intimate marriage ceremony in my creativeness is about discreetly elegant floral preparations and the gathering of family and friends in a tranquil backyard,” Rhind says. “This drink guarantees to evoke the spirit of grace and pleasure of the and friends on this most particular occasion.” That goes proper all the way down to the pea shoot garnish, which, Rhind says, he added to resemble a bride’s bouquet.

The Backyard of Eden

  • 45 ml gin
  • 20 ml sugar snap pea syrup
  • 15ml yuzu juice
  • 4 dashes Absinthe (non-obligatory)
  • Pea shoots, for garnish

Combine elements collectively. Pour right into a highball glass full of ice. Garnish with pea shoots. To batch: Combine all elements collectively apart from the pea shoots.


What makes this cake special?

I made a few different kinds of cakes, and then I did a tasting session with the kindergarten teacher. This is the recipe she chose. She and her mother agreed that this White Wedding Cake had the best flavor, and it was so tender too. Let’s just say they were surprised when I told them that this recipe starts with a cake mix. Yep, it’s a doctored-up cake mix recipe. I’ve been baking this cake for all kinds of celebrations for so many years now, and it’s a big hit at every single event. People love this White Wedding Cake!

Now I know I’ve probably lost a few people at this point who are saying, “OMG, how could you serve a cake mix cake at a wedding??” And, “Why on earth wouldn’t you make it from scratch?” Well… like I said, when I did the tasting with the K-teacher, I presented several cakes for tasting (scratch cakes and then this one), and this White Wedding Cake was the hands-down favorite. And now it has been a favorite with so many people ever since. No one who eats it can tell that it began with a cake mix. It doesn’t taste like a boxed cake mix cake because it has been doctored-up to improve upon the taste.


How Do You Make a Birthday Cake Shot?

To make a Birthday Cake Shot, you start by rimming your shot glasses in frosting and then dipping them into sprinkles. (I used my favorite cream cheese frosting, but any kind will do.)

Then, in a cocktail shaker with ice, add equal parts white chocolate liqueur (I recommend Godiva.) and whipped vodka (I recommend Pinnacle.) along with a splash of Frangelico.

Whipped Vodka is the perfect ingredient when you want a whipped cream or icing flavor in your cocktail.

I actually prefer it over vanilla vodka. (If you&rsquove made my Jingle Juice Punch recipe, you&rsquoll know what I mean.) I also like the addition of Frangelico, a hazelnut liqueur, because it has a toasty/baked-cake flavor.

Finally, pour the contents of the cocktail shaker into your prepared glasses and raise them in a toast to the birthday girl or boy!

While the alcohol content in these liquors isn&rsquot too high, you could add half & half if you want to dilute it a bit.

However you make it, this Birthday Cake Shot is a tasty and celebratory way to honor anyone&rsquos special day. Cheers!
